They say that breakfast is the most important meal of the day, yet 31 million of us skip it each morning, with only 34% of adults taking the time to eat a meal in the morning. Excuses range from not having enough time to not feeling hungry yet, but whatever the excuse, there’s a solution. Sure, you might not be hungry when you get up, but that doesn’t mean you can’t grab breakfast to eat on the go or for when you get to the office. My personal favorite is “I don’t have time,” because in reality, you do. We just choose to spend our time other ways and instead sacrifice a nutritious meal at the start of our day. Solution for that? MEAL PREP! Below are 3 quick, easy and healthy breakfast recipes! Grab them on the go or sit down with your coffee to enjoy these tasty meals!
#1 Egg Muffins

Egg muffins are super easy to make and extremely customizable to fit anyone’s tastes. Simply crack your eggs in a bowl, whisk in some salt, pepper and garlic powder (or any other seasonings for that matter) for taste and some milk to make them fluffy. Make sure you grease your muffin tin before pouring the eggs in each cup about 3/4 of the way full. After that, add any ingredient combinations you can think of! Ham and cheese, peppers and onions, sausage and bacon, spinach and feta, you name it! Keep these puppies in the fridge after baking for breakfast for the entire week! Smash it on an english muffin to make a sandwich or eat as is on the go.
Overnight oats are basically lazy people oatmeal and it’s FANTASTIC! Overnight oats is another make ahead recipe that is delicious and has endless possibilities with customizations. Overnight oats usually consist of a yogurt, a fruit and oats. You can go plain and simple with basic vanilla on vanilla or make it crazy with different flavored yogurts and exotic fruits. You can even decide how healthy (or unhealthy) you want to be by using full fat yogurt or fat free Greek yogurt. The best part is, everything gets combined in a jar and thrown into the fridge and viola! Breakfast for the week is served.

When I created my first Facebook post asking if this would be something people would be interested in, I’m sure many of you rolled your eyes and said something along the lines of “here she goes with another crazy idea again.” But something about this one really clicked for me.
When I was a kid, my parents used to go to this place where we made a bunch of dinners together and brought them home to put in our freezer. It was a really fun way to spend quality time together which also lead to having home-cooked meals at the dinner table, together as a family. I started thinking about this whole thing the other day and was like “I want to do this again.” Unfortunately, the actual place we used to go isn’t in business anymore (super encouraging, right?!) but that didn’t stop me. I had been dabbling with the idea of meal planning and prepping, getting healthier, making more home-cooked meals rather than going out, and somehow all these pieces came together to form this meal prep social group. I thought about it for awhile, and even tried to talk myself out of it, but it wouldn’t go away. It came to a head when Jacob and I went to Red Robin for a meal and spent $40 shortly after I planned and prepped an entire week of meals (and leftovers) in a $70 grocery trip. The fact that we almost doubled our budgeted amount for restaurants every month since we got married was also a factor.
I’m not lying when I say I have literally spent hours looking at Pinterest, thinking up ideas, searching products on Amazon, designing a website, experimenting with recipes, creating a Facebook group and just plain old brainstorming for all sorts of different aspects of this group. I already have a reflection survey and I JUST announced our first actual meet up. I am so passionate about this and I really feel like other people can resonate with at least one of my reasons for starting this group listed above.
I don’t know where this “crazy idea” is going to take me, but I hope that at least one single person benefits from this adventure and I can bring people together and enjoy plenty of yummy food in the process!
